I’ve been eating crazy easy chicken noodle soup, or a version of it, for over a week now. UGH. Somehow this year the average cold has turned into the evil super cold of death and destruction and is holding on with everything its got. Stupid cold. So it seems as if everyone has either GOT a death-cold, or is fighting one off with everything they’ve got.
I came up with this super-simple, crazy easy chicken noodle soup recipe, for the lunchbox blog, about five years ago, when my daughter developed a quiet fever that turned into a scary, full-blown, 2-week-long flu. When my then-husband and I began to feel achey, I knew we needed something magic for us to ALL eat. I created this for my daughter. Because, even five years later, it’s something she will actually eat.
Chicken Noodle Soup is obviously super comforting. I think for the simple reason it reminds us of childhood, of when OUR moms nurtured us back to health. The fun of slurping up the noodles. The feeling that you could just eat the broth and be okay.
And that’s exactly why it’s so good. THE BROTH. I’ve discussed the benefits of awesome bone broth before. It’s immune-enhancing properties, it’s gut-healing abilities, it’s abundance of calcium and other nutrients. Chicken bone broth really IS the “cure for the common cold” – at least the side effects of respiratory infections as it inhibits neutrophil migration. And you can turn it into the most beautiful soup ever. And the easiest one at that!!! Like this crazy easy chicken noodle soup.
This soup can be made up of entirely left-overs. Which is one reason why it’s “crazy-easy”. Use leftover chicken pieces (from a whole roasted chicken), leftover noodles, and even leftover veggies like carrots, sweet potato puree, or whatever. And even if you make the entire thing from scratch, it takes hardly any time at all. This soup is done in less than 30 minutes, which is perfect if you’re feeling under-the-weather while you’re making it. This is also a perfectly quick soup to make in the morning to send for school lunches.

Crazy Easy Chicken Noodle Soup
- 2 Tbsp butter
- 3/4 cup onion, diced
- 3/4 cup celery, diced
- 1 cup carrot, diced
- 2 – 5 cloves garlic, minced (depends how serious you are about fighting a cold)
- 1/2 tsp each basil, oregano, thyme
- 4 – 5 cups homemade chicken bone broth
- 3 cups shredded or cubed COOKED chicken (meat from a whole roasted bird)
- 2 cups COOKED egg noodles (or gluten-free variation), torn in half
- sea salt and ground pepper, to taste
- 2 Tbsp fresh parsley, minced (optional – some kids won’t eat the green stuff)
- If you’re using leftover veggies just throw them in near the end — and make sure they’re kid-approved if you want them to eat it while they feel rotten.
- Melt butter in a large pot. Add onions, celery and a pinch of salt and saute for 5 minutes. Add carrots (if using raw), garlic and saute another 5 minutes. Stir in basil, oregano and thyme. Pour in homemade broth, add cooked chicken and simmer for 15 minutes or so. Then add cooked noodles, parsley and season with salt and pepper.
